I recently spied the Flour, Too advance copies in the office and got so excited that I blurted out “Oh my gosh Flour, Too is in I’m so excited!!” In front of BOTH my bosses. Not just one, but both. Fortunately for me they got a kick out of my child-like exuberance, never having eaten at Flour they don’t understand just how excited I am. For those of you who haven’t been, Joanne Chang’s Flour Bakery was my absolute favorite brunch place in Boston. I dragged every single friend I could there and gobbled up delicious breakfast sandwiches, amazing chocolate cookies (which is a brunch food I assure you), and delightful quiches and pastries. I miss my favorite bakery dearly and my only lasting connection to it is my Flour mug and my cookbook.
So to continue the food fun here is one of my favorite chocolate dessert recipes. Joanne Chang’s Molten Chocolate Cakes from the Flour Bakery Cookbook. They are incredibly low stress from start to finish containing only 10 oz of bittersweet chocolate, a cup of butter, 8 eggs, 3/4 of a cup of sugar, 1/2 tsp of salt and 1 tsp of vanilla extract for six cakes. (I halved the recipe and it worked perfectly).
It’s a fairly straightforward recipe so much so that Irvin Lin at Eat the Love made this amazing wordless recipe for his version of it. Since it’s a Chronicle book I sadly cannot hand over the recipe myself but I thought you may all want to give his a try! Or if your heart is set on Joanne Chang’s I found it for you here. I will say that even if you don’t have a stand mixer like this blogger, you can use a hand mixer or an immersion blender with the whipping attachment. These can also be made ahead and refrigerated for several days (covered in plastic wrap) so you can prepare them a day early for a special occasion.
